One of the most iconic dishes in Thailand is boat noodles, or guay tiew ruea. It is so named because originally, they were sold from boats along Bangkok's canals. Nowadays, most vendors have moved onto land, and you can find this dish all over the country. Thai people love boat noodles, and every time you have them, you will be amazed by how much flavor can be packed into such a small bowl. The heart of boat noodles is the uniquely aromatic and rich broth. The broth is dark thanks to the various soy sauces, and it is infused with a variety of herbs and spices. The most unique part about boat noodles is that the broth is extra rich due to the addition of blood, but it doesn't taste like blood at all.
